Plate or meat with dough, an Arabic dish classified as starter or snack, is one of the most popular foods known to the Levant, Lebanon, Palestine, as well as Jordan.
The plate varies according to its different types and varieties, including Damascus, Baalbaki, milkweed, as well as aramaia.
Depending on their flavours, they can be divided into plate with flour, tahini and plate with tomato or tomato sauce.
Meat Plate Amounts
- 4 cups flour
- 2 teaspoons powder milk
- 2 teaspoons sugar
- 1 teaspoon salt
- 2 cups olive oil
- 1 cup water
Meat Plate Method
- In a kneading bowl, add the flour with powdered milk and water. Then I bother well.
- Add olive oil gradually and continue kneading.
- Add the sugar and salt, then knead until the paste reaches a soft texture. Cover and leave to rest for 60 minutes.
- Make the dough with balls on a floured surface.
- In a butter-greased tray, place the dough, then add the filling on each plate. Bake in the oven until cooked. It is provided hot.
Weft Plate Filling

- 1 kg mince
- 5 chopped onion beads
- 5 tomatoes
- 4 chopped green pepper beads
- 1⁄2 Cup Molasses Pomegranate
- 1⁄2 cup tahini
- 1 teaspoon salt
- 1 teaspoon spices
- 1 teaspoon black pepper
- 1⁄2 teaspoon nutmeg
How to make weft plate filling
- In a deep bowl, mix the meat with the onion, then add the tomatoes and pepper and mix well.
- Add all fluids: pomegranate molasses and tahini and mix.
- Add all the seasoning salt, pepper, spice and nutmeg. Mix them well. Then drain the filling from the excess liquids. And then use it for fillers.
Meat Plate Tahini
Meaty Plate Amounts Tahini
- 2 kg flour
- 2 eggs
- 1 cup corn oil
- 1 tbsp salt
- 1 tbsp sugar
- 2 tbsp yeast
- 1⁄2 cup milk lukewarm or as needed
- Filling:
- 1 kg mince
- 2 tbsp soft chopped parsley
- 1 chopped tomato grain
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon white condiment
- 3 tbsp vegetable oil
- 4 garlic cloves mashed
- 1⁄4 Cup Vinegar
- 2 juicy lemon beads
- 1⁄41 cup tahini
How to make a plate of flesh with tahini
- In a bowl add the eggs with the lukewarm milk, then add the yeast, then the sugar, then the oil and stir with each step.
- Apply a small amount of flour and stir the mixture well, adding the rest gradually to get a soft paste.
- Add milk as needed, then brush the surface of the dough with oil, let it rest and brew for 30 minutes.
- Prepare the plate filling with tahini by mixing the mince with the parsley and strained tomatoes after chopping, garlic, salt, condiment and oil, and stir well.
- Use tomato water with vinegar, lemon juice and tahini on top for tahini sauce. Then add over the beef filling and mix well.
- Form the paste in the form of small boats or circles. And spread the filling on it. Then place the plate with tahini on an oil-greased tray and bake in the oven until cooked.
