How frozen fish fingers work at home:


  1. Fish fingers: cut the fish into 3-inch fingers and 1⁄2-inch thickness.
  2. Place the bread crumbs, coconut, corn flour, curry powder and half a teaspoon of salt in the food processor bowl and then whisk until the coconut is coarsely chopped.
  3. Pour the mixture into a shallow dish, whisk the egg whites with a tablespoon of water in another shallow dish.
  4. Dip the fish fingers into the egg whites, leave a little over the bowl to get rid of any excess eggs and then dip into the breadcrumbs mixture until completely covered.
  5. Roll them in the oven immediately, or place them in the cooler for an hour before cooking. To freeze, arrange the fish fingers covered with the breadcrumbs mix on an oven tray and insert the freezer until firm, for an hour or two.
  6. Store fish fingers in freezer bags that can be re-locked for up to one month.
  7. For the thieves: mix the yogurt with carrots, a tablespoon of water, sweet chile sauce, soy sauce, green onions, lemon juice and salt to taste. Wrap in plastic wrap and insert the cooler until serving.
  8. Preheat the oven to 425 degrees Fahrenheit, hold the oven rack over a high-edged oven tray and spray with cooking spray.
  9. Sprinkle fresh or frozen fish fingers with cooking spray from all sides.
  10. Place the fingers on the oven rack, insert the oven tray to brown the fish fingers, flip them halfway until crisp and golden and continue cooking, for 15 - 20 minutes (if frozen, it will take 20 - 25 minutes).
  11. Remove from the oven and season with salt. Serve with dip sauce.
